Arugula and Spinach Salad
Arugula and Spinach Salad with a Low Sodium Mustard Vinaigrette

Ingredients
- 3 Cups Baby Spinach
- 1 Cup Arugula
- 1/2 Cup Radish sliced
- 1/4 Cup Red Onion diced
- 1 Cup Cherry Tomatoes halved
- 1/4 Cup Pine Nuts
Mustard Vinaigrette
- 1 Tbsp Mustard Powder
- 1 tsp Black Pepper fresh cracked
- 1 tsp Garlic minced
- 1 Tbsp Dak's Spices Super Greek Salt Free Seasoning
- 2 Tbsp Red Wine Vinegar
- 2 Tbsp Balsamic Vinegar
- 1/4 Cup Olive Oil
Instructions
- Combine all salad ingredients in large bowl
- Toss with Mustard Vinaigrette
Dressing
- Combine all ingredients for dressing in medium bowl except Olive Oil
- Slowly whisk in olive oil until well combined
Optional
- If your diet and sodium limits allow this goes great with a little bit of crumble goat or feta cheese on top.
