This is a recipe I am really proud of! Banana bread was always super dense! This one turns out light and fluffy like I like.
Banana Ginger Bread
Soft and light banana bread with a nice touch of ginger

- Stand Mixer
Ingredients
- 1 Stick Butter Unsalted
- 1 Cup Dark Brown Sugar Packed
- 1 Egg
- 1 tsp Vanilla Extract
- 2 tsp Ground Ginger
- 2 tsp Cinnamon
- 2 Bananas mashed
- 1 ½ Cups Swan's Down Cake Flour
- 1 tsp Clabber Girl Baking Powder
Instructions
Pre Heat oven to 350°F
- Using a stand mixer, cream unsalted butter and dark brown sugar using paddle
- Add egg, vanilla, ground ginger, and cinnamon and continue to mix on medium until color starts to lighten up
- Add mashed bananas and mix until just combined
- Remove bowl from stand mixer and add flour then sprinkle the baking powder on top
- Mix in flour by hand until just combined. A little visible flour is ok. Over mixing will end up with dense bread chewy bread.
- Spoon batter into loaf pan
- Bake at 350°F for 1 hour or until toothpick comes out clean
Optional additions to add with the mashed bananas are 1 cup of either unsweetened craisins, raisins, nuts, diced apples, frozen blueberries

I am going to try this recipe today if I have time because it sounds so good! But what I was wondering is this; do you know how much mashed banana you use for this recipe? Different sized bananas will mean more or less mash. Do you think it is about a cup? 1-1/2 cups? Also, I was wondering if I might be able to use this recipe but switch out the bananas for other mashed fruit (and different spices) like pumpkin or peaches? Have you ever used this recipe in different ways?
So sorry for the extreme delay in responding! It comes out to about 1 cup of banana… and I often use applesauce in place of bananas! It works well with many kinds of fruits. 🙂
