Ingredients

  • 1 Cup Butter, Unsalted room temp
  • 1 ½ Cup Dark Brown Sugar packed
  • 2 Large Eggs room temp
  • 2 tsp Vanilla Extract
  • 1 tsp Cinnamon
  • 1 ½ Cup All Purpose Flour
  • 2 tsp Baking Powder
  • 2 Cup Dried Cranberries
  • 3 Cups Quaker Old Fashioned Rolled Oats

Instructions

  • In large bowl using a hand mixer or stand mixer fitted with a paddle, beat the unsalted butter and brown sugar until smooth.
  • Add eggs, vanilla, and cinnamon continue to mix on medium until color starts to lighten
  • Scrape down the sides and bottom, them mix again until well combined
  • Add flour and sprinkle baking powder evenly over the top of the flour, mix on low until just combined
  • Mix in oats until well combined
  • Add dried cranberries, then mix to combine
  • Cover and chill dough in the refrigerator for 45 minutes
  • Preheat Oven to 350°F
  • Using a large cookie scoop, or just a large spoon to scoop roughly 3 tablespoons of dough to make balls
  • Bake 15 minutes or until edges are lightly browned. The centers will look soft.
  • Remove from oven and let cool 5-7 minutes before letting cool completely on cooling rack
