Super Soft Cranberry Oatmeal Cookies

Ingredients
- 1 Cup Butter, Unsalted room temp
- 1 ½ Cup Dark Brown Sugar packed
- 2 Large Eggs room temp
- 2 tsp Vanilla Extract
- 1 tsp Cinnamon
- 1 ½ Cup All Purpose Flour
- 2 tsp Baking Powder
- 2 Cup Dried Cranberries
- 3 Cups Quaker Old Fashioned Rolled Oats
Instructions
- In large bowl using a hand mixer or stand mixer fitted with a paddle, beat the unsalted butter and brown sugar until smooth.
- Add eggs, vanilla, and cinnamon continue to mix on medium until color starts to lighten
- Scrape down the sides and bottom, them mix again until well combined
- Add flour and sprinkle baking powder evenly over the top of the flour, mix on low until just combined
- Mix in oats until well combined
- Add dried cranberries, then mix to combine
- Cover and chill dough in the refrigerator for 45 minutes
- Preheat Oven to 350°F
- Using a large cookie scoop, or just a large spoon to scoop roughly 3 tablespoons of dough to make balls
- Bake 15 minutes or until edges are lightly browned. The centers will look soft.
- Remove from oven and let cool 5-7 minutes before letting cool completely on cooling rack
