This is officially my new go to everyday loaf. You can leave out the garlic or substitute it with something else. Works well with a mashed banana or applesauce… experiment all you like! This is a very forgiving bread recipe.

Works as a loaf for sandwich bread, or little dinner rolls, even hamburger buns!

I know, I know… I used salt! Salt helps control the rise in bread making. You most definitely can leave it out entirely. I can afford to have a tiny bit. The 1/4 tsp in this recipe brings it to about 70mg of sodium per slice.

Ingredients

  • 2 ⅓ Cup King Arthur Unbleached All Purpose Flour
  • 4 Tbsp Sugar
  • ¼ tsp Himalayan Pink Salt optional
  • 1 Head Garlic, Roasted
  • 1 Egg
  • ¼ Cup Whole Milk
  • ½ Tbsp Active Dry Yeast
  • 4 Tbsp Unsalted Butter

Instructions

  • Sift flour into mixing bowl of stand mixer
  • Add sugar, mashed roasted garlic, and yeast to flour
  • Lightly beat egg and milk, then pour into mixing bowl with other ingredients
  • Turn mixer speed on low speed 1 for about 2 minutes to incorporate ingredients
  • Turn mixer speed up 1 notch to speed 2 and let dough knead for 20 minutes
  • Shape dough into a ball, place in bowl covered with plastic wrap in warm spot to rise for 60 minutes
  • Remove dough from bowl and shape into the loaf, rolls, or whatever shape you are looking for
  • Place dough in desired pan lightly sprayed with cooking spray
  • Cover and let rise another 60 minutes
  • Bake until internal temp is 200F … about 35 minutes for 1 loaf or 17 minutes for 2 small loaves
