In all my meatloaf creations I have found that I really enjoy the flavor that adding Lamb brings to the recipe. Plus, adding the Ro-Tel adds a hint of spice to help bring the flavor.

Ingredients

  • 1 lb Ground Beef 85/15 Lean
  • 1 lb Ground Lamb
  • 1 Egg
  • ½ Cup Panko Crumbs
  • ½ tsp Cracked Black Pepper
  • 1 tsp Garlic Powder
  • 2 tsp Lea & Perrin's Reduced Sodium Worcestershire Sauce
  • 1 Can Ro-Tel NSA
  • 1 Tbsp Paprika
  • 1 Tbsp Dried Italian Herb Blend
  • 2 Tbsp Dried Onion Flakes
  • 3 Tbsp Ketchup

Instructions

  • Combine all ingredients (except ketchup) in large bowl
  • Mix together until all ingredients are well incorporated
  • Form meat mixture into loaf shape in large oven safe baking dish
  • Spread Ketchup on top
  • Bake 400F for 1 hour or until internal temp reaches 160F
