In all my meatloaf creations I have found that I really enjoy the flavor that adding Lamb brings to the recipe. Plus, adding the Ro-Tel adds a hint of spice to help bring the flavor.
Meatloaf
Beef and Lamb meatloaf with Ro-Tel

Ingredients
- 1 lb Ground Beef 85/15 Lean
- 1 lb Ground Lamb
- 1 Egg
- ½ Cup Panko Crumbs
- ½ tsp Cracked Black Pepper
- 1 tsp Garlic Powder
- 2 tsp Lea & Perrin's Reduced Sodium Worcestershire Sauce
- 1 Can Ro-Tel NSA
- 1 Tbsp Paprika
- 1 Tbsp Dried Italian Herb Blend
- 2 Tbsp Dried Onion Flakes
- 3 Tbsp Ketchup
Instructions
- Combine all ingredients (except ketchup) in large bowl
- Mix together until all ingredients are well incorporated
- Form meat mixture into loaf shape in large oven safe baking dish
- Spread Ketchup on top
- Bake 400F for 1 hour or until internal temp reaches 160F
