Banana Ginger Bread

Ingredients

  • 1 Stick Butter Unsalted
  • 1 Cup Dark Brown Sugar Packed
  • 1 Egg
  • 1 tsp Vanilla Extract
  • 2 tsp Ground Ginger
  • 2 tsp Cinnamon
  • 2 Bananas mashed
  • 1 ½ Cups Swan's Down Cake Flour
  • 1 tsp Clabber Girl Baking Powder

Instructions

Pre Heat oven to 350°F

  • Using a stand mixer, cream unsalted butter and dark brown sugar using paddle
  • Add egg, vanilla, ground ginger, and cinnamon and continue to mix on medium until color starts to lighten up
  • Add mashed bananas and mix until just combined
  • Remove bowl from stand mixer and add flour then sprinkle the baking powder on top
  • Mix in flour by hand until just combined. A little visible flour is ok. Over mixing will end up with dense bread chewy bread.
  • Spoon batter into loaf pan
  • Bake at 350°F for 1 hour or until toothpick comes out clean

Optional additions to add with the mashed bananas are 1 cup of either unsweetened craisins, raisins, nuts, diced apples, frozen blueberries
