Banana Ginger Bread
Soft and light banana bread with a nice touch of ginger

- 1 Stick Butter Unsalted
- 1 Cup Dark Brown Sugar Packed
- 1 Egg
- 1 tsp Vanilla Extract
- 2 tsp Ground Ginger
- 2 tsp Cinnamon
- 2 Bananas mashed
- 1 ½ Cups Swan's Down Cake Flour
- 1 tsp Clabber Girl Baking Powder
Pre Heat oven to 350°F
Using a stand mixer, cream unsalted butter and dark brown sugar using paddle
Add egg, vanilla, ground ginger, and cinnamon and continue to mix on medium until color starts to lighten up
Add mashed bananas and mix until just combined
Remove bowl from stand mixer and add flour then sprinkle the baking powder on top
Mix in flour by hand until just combined. A little visible flour is ok. Over mixing will end up with dense bread chewy bread.
Spoon batter into loaf pan
Bake at 350°F for 1 hour or until toothpick comes out clean
Optional additions to add with the mashed bananas are 1 cup of either unsweetened craisins, raisins, nuts, diced apples, frozen blueberries
