- 1 Cup Butter, Unsalted room temp
- 1 ½ Cup Dark Brown Sugar packed
- 2 Large Eggs room temp
- 2 tsp Vanilla Extract
- 1 tsp Cinnamon
- 1 ½ Cup All Purpose Flour
- 2 tsp Baking Powder
- 2 Cup Dried Cranberries
- 3 Cups Quaker Old Fashioned Rolled Oats
In large bowl using a hand mixer or stand mixer fitted with a paddle, beat the unsalted butter and brown sugar until smooth.
Add eggs, vanilla, and cinnamon continue to mix on medium until color starts to lighten
Scrape down the sides and bottom, them mix again until well combined
Add flour and sprinkle baking powder evenly over the top of the flour, mix on low until just combined
Mix in oats until well combined
Add dried cranberries, then mix to combine
Cover and chill dough in the refrigerator for 45 minutes
Preheat Oven to 350°F
Using a large cookie scoop, or just a large spoon to scoop roughly 3 tablespoons of dough to make balls
Bake 15 minutes or until edges are lightly browned. The centers will look soft.
Remove from oven and let cool 5-7 minutes before letting cool completely on cooling rack
